V National Baristas Championship-
Costa Rica 2008

On its fifth edition the Specialty Coffee Association of Costa Rica and the Costa Rica
Coffee Institute organized the National Barista Competition 2008.
Twelve competitors showed their abilities as baristas for 2 days, in front of a certify jury leaded by Mr José Arreola, who released the 6 the finalist’s names, during the cocktail celebrated in AKI Café, located in the Tres Ríos Region.
The final contest and the eliminatory rounds, took place in the food court area of the Terra Mall, where Manuel Dinarte won the first place, Ana Lorena won the second place and Cesar Carmendia, won the third place of this National Championship.
Manuel, has participated for 2 consecutive years, being this year the most important and successfully for him. Last year, it was his first time and he didn’t get the position as finalist, however this year, not just got a position as finalist, he became the National Barista Champion.
He will be representing Costa Rica in the World Barista Championship in the city of Copenhage, Denmark, on June 19 till 22.
“My recipe, Honey’s Muse, it is very different, because I used the mucilage extracted, by my self from the coffee bean, espresso, tangerine extract and Chantilly cream. The main idea is that each flavor combined or individual would have a good flavor, for this reason, I was called the Alchemist. I named it Honey’s Muse, because already in the past several poets were inspired by Muses, and every day I feel more and more inspired by the coffee.” For the International Championship, he thinks, that Costa Rica as a producer country, has advantage using this unknown flavor, “ which would help us to compete, to show it to the world and look for getting a privileged place for the Costa Rican coffee and its Baristas.”
Procedure of the Competition:
The National Barista Championship is made with the intention for costaricans and tourists to drink a better cup of coffee, and other new drinks using coffee as the main ingredient.
In the competition the barista has one coffee machine available, a grinder for the espresso, a mixer and any other appliance they might need. The competition takes place in 45 minutes: 15 minutes for preparation, 15 minutes for competition, and the final 15 minutes for cleaning the area.
During the 15 minutes of competition, every Barista should serve for the evaluation 4 espressos, 4 cappuccinos and 4 original drinks of his/her own creation using espresso as a main ingredient (without alcohol) for the judges. Regarding the judges there are 3 types: the sensory judges which are the ones that taste the drinks, the technical judges that evaluate all the machine operation and the barista techniques, and the third judge who is in charge of coordinating the above mentioned.

This past year the evaluation was in charge of:
- José Antonio Vega, Coopronaranjo R. L.;
- Walter Garrido Solís, Industrial Canex;
- Paula Chaverri Echandi, Spoon;
- José Miguel Coto, independent barista;
- William Rojas Solís, Coopedota R.L;
- Luis Diego Ramos.Electrofrío S.A;
- Wayner Jiménez, SCACR;
- Ronald González, Capuchino del Este S.A;
- Natalia Vargas Doka Estate;
- Roberto Molina, Grao;
- Gabriela Vásquez, Technoserve;
- Dinorah González, SCACR.
All of them where directed by Mr. José Arreola, judge and coordinator from the World Barista Championship organization WBC. We thank him for the great collaboration and participation as well!
All the judges received training from Mr Arreola, so they could be certified as national judges for the Barista Championship.
